Traditional Mauritian Roti and Fillings — Part 3/3: Rougaille Sauce and Coriander (Cilantro) Chutney

Mauritian roti and fillings - plain rougaille sauce, rougaille touni

Before closing off this series of 3 posts, I have to admit that the idea of jumping on a plane to go and experience the roti from the streets of Mauritius did cross my mind. For sure, this whole series has taken my tastebuds for a little trip back in time, reminiscing about the mouthwatering aromas that steams out upon opening a pack of freshly purchased roti and the intricate flavour delight of biting into a hot roti.

Traditional Mauritian Roti and Fillings — Part 1/3: Roti / Farata or Paratha (oil-free version)

Mauritian Roti/Farata and Fillings

Embedded in the local food culture, rotis have been puffing on the Mauritian tawas for decades. Served with a few dollops of the typical white bean curry and rougaille sauce, roti or dal puris are the ultimate street comfort food that also happen to be accidentally vegan.

Homemade Burger Buns with Turmeric and Coconut | Vegan/Vegetarian Recipe

Turmeric and Coconut Burger Buns, Vegan Bread Buns

Turmeric always reminds me of a funny situation that happened to one of my friends when we were still colleagues a few years ago. From time to time, we would go out to lunch with a few colleagues to one of the nearby restaurants around the office. At that time I was living in Ireland. So, on one occasion we decided to go for the Indie Spice restaurant. But my colleague was rather hesitant to go to the Indian restaurant on that day as she had quite recently put some braces on her teeth and was worried that the curry sauces would stain the elastic. Even though some people go for coloured rubber bands, she preferred hers to be as invisible as possible. So, I advised her to go for the tomato-based curries that contain less turmeric. But despite this, her elastic band did turn yellow giving her a golden smile! Our Chinese colleague teased her telling her that in China, yellow teeth are regarded as a symbol of prestige. Anyway, she went back to her dentist to get the elastic changed. So, for the whole year after this incident, we did not go to have lunch at the Indian restaurant.

A Paddy's Day Treat: Irish Tea Loaf (Barmbrack) | Oilfree + Vegan

Irish tea loaf, Barmbrack

Mesmerized by the heart wrenching melodies enlivened with interludes of exuberant toe-tapping music, I was eager to climb on the highest spot I could find to have a better view of the carnival as characters, all mostly clad in green, marched down the streets of Dublin city. It was the first St. Patrick's Day celebration I had ever witnessed in 2009 when I was in Ireland and I remember everything as clear as if it was yesterday. The infectious energy, warmth and humour of the carnival mixed with the joyous crowd was quite an enthralling experience.

Sweet Potato Flatbread (Roti) | Oil-free + Vegan Recipe + Yeast-free

Sweet Potato Flatbread, Vegan + No Added Oil

In one of my What I Ate Wednesday videos, I presented these sweet potato flatbreads with mashed avocados as what I ate for breakfast on that day. I have had quite a few requests for the recipe since then. So, I thought I'd share the recipe; it is such an easy one with just two ingredients. Who doesn't like a two-ingredient recipe?! One important procedure in this recipe is to use the sweet potato while it is hot. The heat makes a much softer roti.
