With tomatoes at the heart of the sauce, the typical Mauritian curry is much lighter than coconut milk based sauces. In fact, coconut milk is a less common ingredient in Mauritian-style curries. Quintessentially, the Mauritian curry is a Creole-style sauce with just enough spices for a heart-warming aromatic dish. Despite being much lighter, it is not for the least shy on flavour.

The white bean curry is one of the most common filling that is served with the Mauritian roti that is sold on the streets. While this post is part of a series of three, featuring the traditional Mauritian roti and the fillings that go along with it, you can certainly enjoy this curry over rice too.

Are you a tofu hater? At the Lovlie Cocoon we are tofu lovers even though we limit our consumption because we have an occasional intolerance to it. But I have been eating tofu well before my vegan days and have always loved it. Tofu is not regarded as a meat replacement in Mauritius and is in fact enjoyed by a lot of omnivores too.

While a common vegetable in Africa and Asia, bottle gourd is not all that well-known or common in the Western World. In Mauritius, we mostly refer to it as calabash (or calebasse) even though calabashes are actually not gourds. The calabash is mostly round (which I have not seen before) while the bottle gourd is elongated and come in various thickness. This gourd is quite bland on its own with a very subtle peppery taste. The texture is quite watery and feels like something in between a zucchini and a cucumber when cooked although it does remain firmer.

Growing up, one of my favourite dishes was the green banana curry — very often served at cultural gatherings or Indian weddings in Mauritius. Every now and then, we would enjoy this delicacy at home too.

Today is a little special; I am thrilled and honoured to be sharing one of my favourite curry dishes over at Rika's blog — Vegan Miam. This dish brings back so many cherished childhood memories.

I discovered the inspiring Vegan Miam blog not too long ago. Rika + Doni have really got the flair to make you want to just hop on a plane and travel around the globe as they bring you snapshots of all their travel experiences, among which the gorgeous drool-worthy food of course.

When your favourite vegetable is a rare one to find, it becomes a treat indeed. Bitter gourd has been my all-time favourite vegetable ever since I was a child. The bitterness never bothered me. Honestly, this is much attributed to the way my mom used to prepare it - she would make the most delicious curried-style bitter gourd with potatoes.
