Christmas Cookie Extravaganza at Millie's and some motivation for vegans!
I have two things to share with you today.
First, Millie from Nuestra Cena-Vegan American & Latin Cuisine is presenting us with two months of great cookie recipes for the holiday season! If you’ve never been on Millie’s blog, then you should! She has an array of wonderful Caribbean, Latin, American recipes and a lot more. So, as I was saying, this month and until Christmas (maybe extended to the end of December!) is Christmas Cookie Extravaganza at Millie’s blog.
She kindly invited me for a cookie post on her blog and I made these holiday inspired coconut macaroons above! The recipe for these will be posted on Millie’s blog as from 11th November. But in the meantime, you can have a look at other cookie recipes from fellow bloggers and Millie herself! I hope you enjoy the cookies and if you do make any of them please share your feedback/comments with us!
Second, I came across Danie’s blog - My Vegan Corporate Life (or rather Danie found me first!) and it seems that this blog captured my attention at the right moment. I was currently going through quite a tiring moment dealing and putting up with the challenge of eating out in a non-vegan world and being social amongst meat-eaters. At the end of the day, sometimes I feel so drained. There are definitely up times where I am self-motivated and feel very strong about my choice and convictions. But like any human being, this week has been quite an uphill. Then, I found one of her posts where Danie talks about her experience of being a vegan in the corporate world. It’s nice to read about other people’s experiences to remind us that, as lonely as you may feel sometimes in this not so vegan-friendly environment, you are not alone. Reading her post motivated me again and reminded me that I am doing this for no one else but me! Thanks Danie! I hope this can bring some comfort and motivation to all you other vegans out there!

Cookie extravaganza??? That sounds so fun! I haven't been over to her blog before, but I know I will - I am ALL about cookies!!!
